Paneer Jalfrezi Recipe – Spicy Indian Style

February 6, 2025

Paneer jalfrezi is a colourful North Indian stir-fry where paneer, peppers and onions are tossed in a tangy tomato masala. The vegetables stay lightly crisp, making this faster and brighter than a slow curry.

Ingredients

  • 250 g paneer, cubed
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 onion, sliced
  • 1 green and 1 red bell pepper, sliced
  • 2 tomatoes, chopped
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon coriander powder, 1/2 teaspoon cumin powder and 1/2 teaspoon chilli powder
  • 1/2 teaspoon garam masala, 1 teaspoon kasuri methi and salt

Method

  1. Soak paneer in warm water for 10 minutes, then drain. Sear lightly in one teaspoon oil and set aside.
  2. Heat remaining oil with cumin. Fry onion and peppers for 3–4 minutes so they retain bite.
  3. Add ginger-garlic paste, tomatoes and spices. Cook until the tomatoes soften and the oil separates.
  4. Fold in paneer, kasuri methi and garam masala. Cook 2 minutes and serve with roti or rice.

Tips and storage

Do not overcook paneer or peppers. Add a splash of water if the masala catches. Refrigerate for up to 2 days and reheat with a tablespoon of water.

Can I use tofu?

Yes, firm tofu works well; press it first and pan-fry until golden.
