Paneer jalfrezi is a colourful North Indian stir-fry where paneer, peppers and onions are tossed in a tangy tomato masala. The vegetables stay lightly crisp, making this faster and brighter than a slow curry.
Ingredients
- 250 g paneer, cubed
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 onion, sliced
- 1 green and 1 red bell pepper, sliced
- 2 tomatoes, chopped
- 1 teaspoon ginger-garlic paste
- 1 teaspoon coriander powder, 1/2 teaspoon cumin powder and 1/2 teaspoon chilli powder
- 1/2 teaspoon garam masala, 1 teaspoon kasuri methi and salt
Method
- Soak paneer in warm water for 10 minutes, then drain. Sear lightly in one teaspoon oil and set aside.
- Heat remaining oil with cumin. Fry onion and peppers for 3–4 minutes so they retain bite.
- Add ginger-garlic paste, tomatoes and spices. Cook until the tomatoes soften and the oil separates.
- Fold in paneer, kasuri methi and garam masala. Cook 2 minutes and serve with roti or rice.
Tips and storage
Do not overcook paneer or peppers. Add a splash of water if the masala catches. Refrigerate for up to 2 days and reheat with a tablespoon of water.
Can I use tofu?
