This vegan cheeseburger uses a hearty bean and mushroom patty with crisp salad, a soft bun and dairy-free cheese. It is filling, easy to customise and best cooked until the edges are browned.
Patty ingredients
- 1 cup cooked kidney or black beans
- 1 cup finely chopped mushrooms
- 1/2 cup oats or breadcrumbs
- 1 small onion, garlic, smoked paprika, cumin, salt and pepper
- Oil, burger buns, lettuce, tomato and vegan cheese
Method
- Cook mushrooms and onion until their moisture evaporates.
- Mash beans roughly and mix with mushrooms, oats and seasoning.
- Shape two patties and chill for 20 minutes.
- Pan-fry in oil for 4–5 minutes per side.
- Toast buns and build with salad, sauce and vegan cheese.
Do not overblend the mixture; a little texture keeps the patty satisfying. Refrigerate shaped patties for up to one day before cooking.
