Therefore, I decided to recreate the dish at home. After experimenting several times, I finally managed to achieve a recipe that closely matched the flavour I experienced that day. Since then, this crispy corn recipe has become a regular snack in my kitchen.

Ingredients

For Crispy Corn

  • 2 cups sweet corn kernels (preferably frozen or boiled)
  • 3 tablespoons maida (all-purpose flour)
  • 3 tablespoons corn flour
  • 1 teaspoon black pepper powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon garlic paste
  • ½-inch ginger, grated
  • 1 tablespoon soy sauce
  • Salt to taste
  • Oil for deep frying

For the Garnish and Stir Fry

  • 1 small onion, finely chopped
  • ¼ red bell pepper, finely chopped
  • ¼ green bell pepper, finely chopped
  • ¼ yellow bell pepper, finely chopped
  • 2–3 green chillies, finely chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon chilli sauce
  • 1 teaspoon vinegar
  • 1 tablespoon oil
  • Spring onions for garnish (optional)

How to Make Crispy Corn at Home

1: Coat the Corn

First, place the sweet corn kernels in a mixing bowl. Next, add maida, corn flour, black pepper, red chilli powder, garlic paste, soy sauce, and salt.

Then toss everything well so that the corn kernels coat evenly. Make sure each kernel remains separate and does not clump together.

2: Fry the Corn

Meanwhile, heat oil in a deep-frying pan. Once the oil becomes hot, fry the coated corn kernels in batches.

After a few minutes, the corn turns golden and crispy. At this stage, remove the fried corn using a slotted spoon. Then place it on paper towels so the excess oil drains properly.

Set the crispy corn aside.

3: Stir-fry the Vegetables

Next, heat one tablespoon of oil in a wok or frying pan.

First, add the finely chopped onions and sauté them until they turn slightly translucent. Then add the chopped bell peppers and green chillies.

Now stir-fry the vegetables on high heat for about two to three minutes. As a result, the vegetables remain crunchy and colourful.

4: Add the Sauces

After that, add soy sauce, chilli sauce, and vinegar to the vegetables. Mix everything well and sauté for another minute.

At this stage, the sauce should lightly coat the vegetables without making the mixture overly wet.

5: Toss the Crispy Corn

Next, add the fried corn to the wok with the vegetables. Then gently toss everything together so the sauce and vegetables coat the crispy corn evenly.

However, avoid over-mixing because the dish should remain crisp and slightly dry.

6: Garnish and Serve

Finally, garnish the crispy corn with finely chopped spring onions for freshness.

Serve the dish immediately while it remains hot and crunchy.

Crispy corn tastes best when served hot. Moreover, you can enjoy it in several ways:

Maintain a medium-high oil temperature so the corn becomes crisp without absorbing too much oil.

3. Serve Immediately
Crispy corn tastes best right after cooking. Therefore, serve it immediately to enjoy the perfect crunch.
