Vegan panna cotta is a silky set dessert made with coconut milk, vanilla and agar agar instead of gelatin. It has a gentle coconut flavour and holds its shape while staying creamy.
Ingredients
- 400 ml full-fat coconut milk
- 100 ml plant milk
- 3 tablespoons sugar or maple syrup
- 1 teaspoon vanilla
- 1 1/2 teaspoons agar agar powder
- Berry compote and toasted nuts to serve
Method
- Whisk coconut milk, plant milk, sugar and agar agar in a saucepan.
- Bring to a gentle boil, whisking constantly, then simmer for 2 minutes.
- Remove from heat, stir in vanilla and pour into lightly oiled moulds.
- Chill for at least 4 hours until set. Unmould and serve with berry compote.
Tips and storage
Measure agar carefully because too much makes the dessert rubbery. Refrigerate covered for up to 3 days and add toppings just before serving.
