Sattu is roasted gram flour, a pantry staple in Bihar and eastern Uttar Pradesh. Blended with ripe mango and banana, it makes a thick breakfast smoothie with nutty flavour and natural sweetness. I use chilled milk and add the sattu gradually so it stays smooth.
Ingredients
- 2 tablespoons sattu (roasted gram flour)
- 1 ripe mango, peeled and chopped
- 1 small ripe banana
- 250 ml chilled milk or unsweetened plant milk
- 1 teaspoon jaggery, optional
- 2 ice cubes
- Pinch of cardamom or roasted cumin, optional
Method
- Add milk, mango, banana and jaggery to a blender. Blend until smooth.
- Add sattu and cardamom. Blend again for 20 seconds. If the smoothie is too thick, add a splash more milk.
- Taste before adding more jaggery because ripe mango and banana vary in sweetness.
- Pour into two glasses and serve immediately.
Tips and variations
For a savoury version, leave out the fruit and blend sattu with chilled water, lemon, black salt and roasted cumin. Do not keep the fruit smoothie at room temperature; refrigerate it and drink within the same day.
Frequently asked questions
Can I prepare it ahead?
Blend just before serving for the best colour and texture. You can measure the sattu and chop the fruit in advance.
Is sattu gluten-free?
Pure roasted gram flour is naturally gluten-free, but check the package if you have a strict allergy concern.
