  • I cup chickpea flour

  • Salt and pepper to taste

Instructions to make Vegan Spinach Omelette:

  1. Heat the cooking oil or butter in a non-stick skillet over medium heat.
  2. In a bowl, add 1 cup of chickpea flour and 1 teaspoon of milk and add water until you get a runny consistency. Add the chopped spinach, onion, bell pepper, and tomato to the mixture. Mix well to combine all the ingredients evenly.
  3. Season with salt, pepper and pizza seasoning and chilli flakes.
  4. Once the skillet is hot, pour the mixture into the skillet, spreading it out evenly with a spatula.
  5. Allow the omelette to cook undisturbed for a few minutes until the edges start to set and the bottom is lightly golden brown.
  6. Sprinkle the shredded cheese evenly over one half of the omelette.
  7. Using a spatula, carefully fold the other half of the omelette over the cheese-covered half, creating a half-moon shape.
  8. Cook for another minute or two until the cheese melts and the omelette is cooked through.
  9. Slide the omelette onto a plate and serve hot.
  10. Garnish with additional finely chopped parsley and some pepper.
