Veg Fried Rice Ingredient List:

  • 2 cups cooked basmati rice, preferably day-old
  • 1 tbsp of oil (safflower or vegetable oil)
  • 1 tbsp ginger-garlic paste
  • 1 small onion, finely chopped
  • 1/2 cup bell peppers, finely chopped-red, green and yellow
  • 1/2 cup finely chopped carrots, green beans chopped, cabbage finely shredded
  • 2-3 green chilies, slit (use according to taste)
  • 2 tbsp soy sauce
  • 1 tbsp vinegar, preferably rice vinegar
  • 1 tbsp red chilli sauce, for heat
  • Salt for taste
  • 1/2 tbsp black pepper
  • 1/2 inch ginger (optional)
  • Chopped 2-3 green onions for garnish
  • 1 tsp chopped cilantro for garnish

Vegetable Fried Rice Recipe: A step-by-step guide to making flavorful fried rice with a variety of fresh vegetables such as carrots, peas, bell peppers, and onions, tossed in soy sauce and aromatic spices for a satisfying dish.

Instructions:

How to make Fried Rice:

  • Use leftover rice, otherwise cook 1 cup basmati rice with 2 cups water, let it cool totally and spread it on a plate so that it doesn’t stick.
  • Pan-fry the vegetables:
  • Heat the oil at a medium-high temperature in a large wok or non-stick skillet.
  • Add ginger-garlic paste and sauté for about 30 seconds, till it is fragrant.
  • Add the sliced onions and sauté until they turn translucent.
  • Add in chopped bell peppers, carrots, green beans, and cabbage. Stir-fry for 3-4 minutes until the vegetables are tender and still crisp.
  • Add the slit green chilies for heat.
  • Integrate Rice with Flavorings:
  • Pour the cooked rice into the wok. Stir gently so that it won’t break the rice. Use medium heat.
  • Add soy sauce, vinegar, and red chili sauce if available. Season with salt and black pepper to taste.
  • Stir the rice for 3 to 4 minutes until it is well coated with the sauces and heated through.

Garnishes:

Remove from heat, garnish with chopped green onions and cilantro.

Servings:

Veg fried rice serves straight as a main course. This can be accompanied by Chili Paneer or Veg Manchurian, Gobi Manchurian or any other side dish of Indo-Chinese cuisine that you prefer.
