Instructions to make Veg Bruschetta:

1: Prepare the Bread

Preheat your oven to 200°C (400°F).

Arrange the baguette slices on a baking sheet. Drizzle both sides lightly with olive oil.

Toast in the oven for 6-8 minutes, flipping halfway through, until golden and crispy.

Take out the oven and with the cut side of a garlic clove rub each slice gently for a very subtle aromatic flavor.

2: Preparation of Toppings

Combine cherry tomatoes, Kalamata olives, and chopped basil in a bowl.

Add a drizzle of olive oil and season with salt and pepper and gently toss.

Blanch the asparagus tips in a little salted water for 1-2 minutes and immediately plunge into an ice water bath to keep its color vibrant.

3: Prepare Bruschetta

Spread the mixture of tomatoes and olives all over toasted slices of baguette.

Garnish a few blanched asparagus tips on each slice.

Shred some Manchego cheese and sprinkle all over the Bruschetta

4: Garnish and Serve

Assemble the bruschetta and finish with a drizzle of balsamic glaze, if desired. This adds a nice sweetness and tanginess to the plate.
