Bihari Litti Chokha Recipe – Authentic & Traditional Guide

March 3, 2026

Bihari litti chokha is a smoky regional meal of wheat dough balls stuffed with roasted gram flour and served with mashed roasted vegetables. The contrast of crisp litti, smoky chokha and ghee makes it memorable.

For the litti

  • 2 cups whole-wheat flour
  • 1 cup roasted gram flour
  • Ajwain, kalonji, garlic, pickle masala, lemon and salt
  • Oil or ghee and warm water

Method

  1. Make a firm dough with flour, salt, oil and water. Rest for 20 minutes.
  2. Mix gram flour with spices, garlic, lemon and a little water.
  3. Stuff dough balls, seal well and bake or air-fry until browned and cooked through.
  4. For chokha, roast or boil eggplant, tomato and potato. Mash with onion, garlic, coriander and mustard oil.
  5. Crack the litti slightly, brush with ghee and serve with chokha.

Cook over moderate heat so the centre cooks before the outside darkens.
