Yummy Creamy Vegetarian Cauliflower Soup Recipe

This cauliflower soup came about on a rainy Bangalore evening when I wanted something warm and comforting but had very little in the kitchen. A head of cauliflower, an onion, a few cloves of garlic, and some vegetable stock were all I had to work with. I roasted the cauliflower first because I had learned from my broccoli soup experiments that roasting brings out a nuttiness you cannot get from boiling. Twenty minutes later, I blended everything and the soup came out so creamy and flavourful that I could not believe there was no cream in it. It has since become one of the most requested soups in our house, especially during the monsoon season when all you want is something warm in your hands.

Creamy cauliflower soup is a comforting, flavourful meal that comes together with just a few wholesome ingredients. Cauliflower has a wonderful ability to turn silky and rich when roasted and blended, which means this soup achieves its creamy texture naturally without any cream or heavy additions.

The recipe is simple and quick, making it ideal for busy days when you still want something homemade and nourishing. It works beautifully as a light lunch or a warming dinner, and it pairs perfectly with a slice of crusty bread on the side. Once you try it, it earns a permanent spot in your regular rotation.

Why Choose Cauliflower Soup?

Cauliflower is an incredibly versatile vegetable. In addition, it is low in calories while still being rich in vitamins and essential minerals. Therefore, this healthy vegetarian cauliflower soup is an excellent option for those who are health-conscious or following a vegetarian lifestyle. Furthermore, it works beautifully as a dairy-free cauliflower soup, which makes it suitable for many dietary preferences. Despite being dairy-free, the soup still develops a creamy texture and deep flavour. Consequently, it can be difficult to believe that such a rich and satisfying soup is made entirely from wholesome plant-based ingredients.

Ingredients:

1 large head of cauliflower, cut into florets
1 medium onion, chopped
2 cloves of garlic, minced
4 cups vegetable broth
1 cup coconut milk, or almond milk for a lighter version
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon thyme, dried or fresh
1/2 teaspoon nutmeg, optional for added warmth
Chopped parsley for garnish
Optional Toppings:
Roasted chickpeas
Sliced almonds
Chopped green onions
Bread Croutons
Shredded cheese for non-vegans

How to prepare Vegetable Cauliflower Soup:

1: Prepare the Cauliflower

Begin by washing and chopping the cauliflower into small florets. This will help cook the cauliflower evenly and provide a smooth texture in your soup.

2: Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until they are translucent and fragrant. This usually takes about 3-4 minutes.

3: Cook the Cauliflower

Add the cauliflower florets to the pot. Stir the onion and garlic mixture together with the florets. Continue cooking for a further 5 minutes or until the cauliflower starts softening.

4: Add the Broth

Pour in the vegetable broth, salt, pepper, thyme, and nutmeg. Stir everything well and bring the mixture to a boil.

5: Simmer

After it starts boiling, it lowers the heat and lets it simmer for approximately 20 minutes. This will cause the cauliflower to be tender with flavours fully absorbed.

6: Blend the Soup

Blend the soup by making use of an immersion blender. It will be perfectly smooth and creamy. Use your countertop blender if you are unable to make use of this type of blender. Pour portions in small amounts and blend for sure.

7: Add Milk

Return the blended soup to the pot and stir in the coconut or almond milk. Let it warm through, which takes about 5 minutes.

8: Serve

Ladle the creamy cauliflower soup into bowls and garnish with your choice of toppings, like fresh parsley, roasted chickpeas, or sliced almonds.
