For the Burnt Butter Sauce

  • ½ cup unsalted butter
  • 2 garlic cloves, thinly sliced
  • 6–8 fresh sage leaves
  • A pinch of crushed red pepper flakes (optional)
  • Parmesan cheese for garnish

Step-by-Step Instructions

1. Prepare the Spinach Pasta Dough

First, blanch the spinach in boiling water for about 1–2 minutes. Immediately transfer it to ice water to stop the cooking process. Then, squeeze out as much excess water as possible and blend the spinach into a smooth puree.

Next, combine the flour and salt in a large bowl. Afterwards, add the spinach puree and olive oil. Mix the ingredients using a spoon or your hands.

Gradually add water, one tablespoon at a time, until the dough begins to come together. Then transfer the dough onto a lightly floured surface and knead it for about 8–10 minutes until it becomes smooth and elastic.

Finally, cover the dough with a damp cloth and allow it to rest for at least 30 minutes.

2. Prepare Homemade Ricotta Cheese

3. Prepare the Garlic Parmesan Ricotta Filling

Meanwhile, heat a small pan with a little olive oil. Add the minced garlic and cook it until it becomes lightly golden and fragrant.

Next, combine the ricotta cheese, sautéed garlic, Parmesan cheese, parsley, oregano, and nutmeg in a bowl. Then season the mixture with salt and black pepper.

Finally, mix everything thoroughly and taste the filling. If necessary, adjust the seasoning.

4. Assemble the Ravioli

First, divide the pasta dough into four portions. Roll out one portion at a time using a rolling pin or pasta machine until it forms a thin sheet.

Next, cut the dough into squares or circles using a ravioli cutter or knife.

Then place one teaspoon of filling in the centre of each piece. Lightly brush the edges with water and place another sheet of dough on top.

Press the edges firmly to seal while removing any air bubbles. Repeat the process until all the dough and filling are used.

Meanwhile, bring a large pot of salted water to a boil. Cook the ravioli in batches for 3–4 minutes, or until they float to the surface. Carefully remove and drain them.

5. Prepare the Burnt Butter Sauce

While the ravioli cooks, melt the butter in a large skillet over medium heat. Continue cooking the butter until it turns golden brown and develops a nutty aroma.

Next, add the sliced garlic and fresh sage leaves. Cook them for about 1–2 minutes until they become crispy.

If you prefer a slight kick of spice, add a pinch of crushed red pepper flakes.

Then gently add the cooked ravioli to the skillet and toss them carefully so they are evenly coated in the burnt butter sauce.

6. Serve the Spinach Ravioli

Finally, arrange the ravioli on serving plates. Drizzle extra burnt butter sauce over the top for additional flavour.

Afterwards, garnish with grated Parmesan cheese and a sprinkle of fresh parsley. Serve immediately while the ravioli is warm and aromatic.
