Chutneys

Tamarind Chutney:

  • Tamarind pulp: ½ cup
  • Jaggery: ½ cup
  • Cumin powder: ½ tsp
  • Salt: to taste

Green Chutney:

  • Fresh coriander leaves: 1 cup
  • Mint leaves: ½ cup
  • Green chillies: 2
  • Lemon juice: 1 tbsp
  • Salt: to taste

Garlic Chutney (Optional):

  • Garlic: 5 cloves
  • Kashmiri red chilli powder: 1 tsp
  • Lemon juice: 1 tsp
  • Salt: to taste

Spices:

  • Chaat masala: 1 tsp
  • Red chilli powder: ½ tsp
  • Salt: to taste
  • Lemon juice: 2 tsp

Step-by-Step Instructions to Make Bhel Puri

1. Prepare the Chutneys

First, prepare the tamarind chutney. In a pan, combine tamarind pulp, jaggery, cumin powder, and salt. Then, cook the mixture until it thickens. Afterwards, allow it to cool completely.

Next, prepare the green chutney by grinding coriander leaves, mint leaves, green chillies, lemon juice, and salt with a little water until smooth.

If you prefer extra heat, prepare the garlic chutney as well. Simply grind garlic, red chilli powder, lemon juice, and salt with minimal water to form a smooth paste.

2. Prepare the Base Ingredients

Meanwhile, lightly roast the puffed rice in a dry pan for 2–3 minutes. This step ensures it stays crisp. Once roasted, allow it to cool.

After that, finely chop the boiled potatoes, onions, tomatoes, and cucumber. Preparing everything in advance helps with quick assembly later.

3. Assemble the Bhel Puri

Now comes the most exciting part — assembling the chaat.

First, take a large mixing bowl and add puffed rice, broken papdi, and sev. Then, toss in the diced potatoes, chopped onions, tomatoes, cucumber, and roasted peanuts.

Next, add two tablespoons of tamarind chutney along with green chutney. If desired, include garlic chutney for extra spice. Subsequently, sprinkle chaat masala, red chilli powder, and salt.

Finally, squeeze fresh lemon juice over the mixture for added freshness.

4. Mix and Serve

Gently mix everything so that the chutneys and spices coat the ingredients evenly. However, avoid over-mixing, as it may break the papdi.

Immediately transfer the Bhel Puri to serving plates. Then, garnish with extra sev, fresh coriander leaves, and additional papdi for crunch.

Serve at once. Otherwise, the puffed rice may lose its crisp texture.

Tips for Perfect Bhel Puri

Serve Immediately

Because Bhel Puri tends to become soggy over time, assemble it just before serving.

Adjust the Flavours

You can easily modify the sweetness, tanginess, or spice level by adjusting the chutney quantities.
