Ingredients

Miso Soup Base

  • 4 cups vegetable broth
  • 3 tablespoons miso paste white, yellow, or red
  • 200 g firm tofu cubed
  • 1 cup mushrooms sliced
  • 1 cup spinach chopped
  • 1 cup bok choy chopped

For Garnish

  • 1 tablespoon soy sauce
  • 2 teaspoons grated ginger
  • 2 cloves garlic minced
  • 1 tablespoon sesame oil

Garnish

  • 2 green onions chopped

Optional Toppings

  • Nori slices
  • Sesame seeds
  • Chilli flakes

Instructions

  • Method
  • 1: Prepare Ingredients for Miso and Tofu Soup
  • First, wash and chop all vegetables. Then, cut tofu into cubes and set aside.
  • 2: Sauté Aromatics
  • Next, heat sesame oil in a pot. Add garlic and ginger, and sauté until fragrant.

  • After that, add mushrooms and cook for a few minutes. Then, add bok choy and spinach until softened.
